Tuna Baby!

Its tuna season!! Last week, I was invited to go tuna fishing with my good friend and renowned chef, Danny Miller, from Dudley Market. Known for his exceptional culinary skills, Danny is also one of the best fishermen I know, making this trip one for the books.

We set out to the west side of Catalina at 6 AM, the early morning air filled with excitement and anticipation. Just two hours later, we were rewarded with our first bites. Within the first hour, we managed to reel in three beautiful bluefin tuna, each weighing between 25 to 30 pounds.

This trip was especially significant for me as I caught my first tuna. Following tradition, I ate the heart of my first catch. I expected a mouthful of iron but was pleasantly surprised by the lovely taste of fresh tuna with slightly tougher meat. It was a unique and unforgettable experience.

Danny, ever the expert, immediately bled and spiked the fish using the Ikijime method.

This Japanese technique involves inserting a spike into the brain of the fish, usually behind and above the eye, causing instant death. The fish’s fins flare and then relax, indicating a successful kill. This method is not only humane but also ensures the best quality meat, preserving the fish’s texture and flavor.

Our adventure didn’t stop there. We later hooked a massive tuna, a true “big girl,” that gave us a 45-minute battle. We passed the rod around the boat, each taking turns fighting this powerful creature. Despite our efforts, she managed to escape just 40 feet under the boat, leaving us with an unforgettable story and a deeper respect for these incredible fish.

The real fun began 48 hours after the catch. After allowing the fish to rest on ice, we broke her down into four beautiful fillets, two collars, and the head. The weekend was filled with culinary delights as we shared this amazing fish with friends and family. We made hand rolls, nigiri, sashimi, poke tacos, poke nachos, and shawarma-spiced grilled collars, savoring every bite. Each dish was a testament to the respect we had for the fish and the gratitude we felt for the ocean's bounty.

This fishing trip was more than just a day on the water; it was a celebration of friendship, skill, and the incredible gifts of the ocean. Sharing this experience and the delicious meals that followed reminded us of the importance of respecting nature and making the most of its offerings. I look forward to many more adventures like this, each one a unique and cherished memory.
